I made these darling little bunny cupcakes for the Pearl Girl’s first birthday party, and thought they would be perfect for Easter. Her party had an Easter theme because, well, I’d already decorated for it and didn’t feel like taking the Easter stuff down to put birthday stuff up. You can find some of my other Easter posts here. I’ll share more about our little party soon, but had to show you these little cuties because they were so easy and I really loved how they turned out. I am obsessed with my mini muffin tin lately, so I used it to create 24 itty bitty bunny cupcakes – bite sized for adults and perfectly sized for toddlers.

I used white mini cupcake liners and found the super cute bunny marshmallows at the grocery store. They aren’t specially flavored but do come in fun colors and taste delicious. I made the Magnolia Bakery recipe vanilla cupcakes, but you can use any cake mix or scratch recipe. I found my recipe on the Food Network. The key to filling the mini liners is to use a zippered sandwich bag or pastry bag. I filled a quart size ziplock with batter and cut the tip off one corner, then squeezed the batter in to each liner to fill it 3/4 full. I used the same trick to ice the cupcakes with my best ever cream cheese icing recipe.

I sprinkled a fun purple, white, and pink sprinkles mix on top that I found in the dollar section at Target. It even has little bunnies in it! If you are a messy cake decorator like me, sprinkles cover a multitude of sins. Perch a teeny bunny marshmallow on top and you’re done, so easy. The cake stand was my Great Aunt Bonnie’s, and I’m a little obsessed with it. I may or may not have a cake stand addiction.
