I love a good baking hack, and today I’ve got two to share with you to help you make these delicious and super cute little Mini Chocolate Chip Cookie Cups with Cream Cheese Icing. The best thing about these little cookie cups (besides the deliciousness) is that they can be easily customized for any occasion with sprinkles. Here is a rainbow version I made for the kids.
All you need for the cookie cups is a mini cupcake pan and a package of Nestle Toll House Chocolate Chip Cookie Dough. The 24 already divided cookies fit perfectly in your mini cupcake pan, as you can see below. Squish them in there, and bake according to package directions. Let them cool, then get ready to frost them.
I usually let them cool a few minutes in the pan and then the rest of the way on my cake plate. You can see I let mine go a minute or two long. They still tasted amazing. They will have little craters in the middle, perfect for filling with delicious cream cheese icing.
Whip up half a batch of my Best Ever Cream Cheese Icing recipe found here. Half a batch is plenty. Once your icing is ready, scoop it in to a plastic ziplock bag and cut the tip off the corner of the bag. Squeeze your icing through the cut hole to quickly ice all 24 cookie cups. Enjoy.
